Nohora Del Carmen Oviedo's small farm, Gualmatan, is located in La Florida, a municipality of Nariño. Gualmatan is 100% Castillo varietal, and at the farm they ferment for 12 hours, and dry on the patio for 15 days.
Castillo is a considered a hardy varietal of caffea arabica, due to its resistance Coffee Leaf Rust (or la roya). Castillo was developed by Cenicafé in Colombia over the span of two decades for this very purpose.
