In the lush, mountainous region of Cau Dat, where tea, coffee, and other produce is grown, there is a group of producers contributing to several wet mills whose quality is far above what is typical for Vietnam. What's more is that Vietnam is the world's largest producing country of Robusta coffee, while only a handful of producers there grow Arabica.
These small producer farms range between 1 and 3 hectares (2.5-7.5 acres). There are about 100 farmers in Da Lat, about 30 of whom are women owned and managed. These producers receive technical assistance, free of charge, from agronomists to help improve quality across the entire supply chain.
Carbonic Maceration is a bit of a newer term in the coffee world, but is a process that has been used in winemaking for centuries. This process involves filling a sealed vessel with carbon dioxide and then adding the whole coffee cherries after picking.
