La Pastora Black Honey
This exceptional Black Honey coffee from La Pastora is the result of a long-standing relationship built on great coffee, family, and hospitality. For years, Minor and his family have shared their coffees with us, from a beloved Yellow Honey Christmas coffee to a range of Naturals and Honeys.
For this Black Honey, the cherry skin is removed while the sweet mucilage remains intact around the coffee seed as it dries on raised beds. As the mucilage dries, the sugars encourage fermentation, creating a coffee with greater sweetness, depth, and complexity than a traditional washed coffee.
But La Pastora is about more than what's in the cup. Every visit with Minor comes with a bottle of rum, sweet desserts from his daughters, and the kind of hospitality that makes you want to return. His recently built cupping lab sits high above the mountainside, overlooking the coffee trees and the city of Santa Maria.
