Sr. Gerardo Trejos operates a small farm in the hills of the Santa Barbara region, overlooking Lake Yojoa. Like many specialty producers, he separates his farm into specific lots. This coffee comes from Lots 1 and 2 of his Pacas varietal lots.
The mill that processes this coffee, Beneficio San Vicente, operates in the Santa Barbara region of Honduras. Founded and operated by the Paz family, Beneficio San Vicente's mission to provide market access to these small producers. While it would be easier to lump them all together, as it requires much time and effort to inventory and keep separate all of the individual lots, they are committed to helping their neighbors prosper.
Roaster: Broadcast Coffee in Seattle Washington.
Recommended brew method: V60 | Chemex | Autodrip | Aeropress
