Tasting Notes
Juicy and indulgent with notes of fresh strawberry, grape jelly, and chocolate brownie. A syrupy body and vibrant fruit sweetness lead to a smooth, lingering finish.
The Story in Every Cup
Sourced from smallholder farming communities surrounding the stunning Laguna de Ayarza in southeastern Guatemala, this coffee carries the mark of an extraordinary landscape. Formed within the crater of two collapsed volcanoes, the region’s deep blue lakes, cool climate, and nutrient-rich volcanic soils provide ideal conditions for cultivating specialty coffee.
Partnering directly with local producers, Covoya Guatemala brings these carefully selected ripe cherries to their regional wet mill to showcase the area's distinct volcanic terroir.
-
Process: Natural. The cherries are slow-dried on open patios for 10 days before finishing in mechanical dryers, developing a rich, syrupy sweetness while preserving the vibrant fruit character.
-
Variety: A regional blend of Anacafe 14, Bourbon, Catuai, Pache, and San Ramon, creating a deeply balanced cup with layered fruit, chocolate, and sweetness.
